Can I update multiple products at once (i.e. change listing template, shipping costs, eBay features, etc.)?

Yes, follow Update Products -> Product Search menu, select multiple products that you would like to update and use the drop down list (What Action You Would Like To Take section of the search portion of the page) and choose one of the options / features that you would like to update.
